I love grilled shrimp!
It is really quick to make, really, it can be ready in five minutes, and its low in calories (approximately 10 calories a shrimp)! That alone is a good reason I make shrimp on a regular basis, but added to a taco with a low calorie corn tortilla ( 25 calories each), and loaded with antioxidant veggies and fruit salsa and it is a no-brainer for me. Shrimp is also rich in choline, which is a great anti-inflammatory nutrient. I marinate the shrimp in some evoo, lemon, orange, lime zest and juice, garlic, pepper ,and fresh herbs.
I made these with a peach and avocado salsa and stuffed the corn tortillas with grilled shrimp and sauteed veggies and topped them with a yogurt cilantro sauce.
