Salmon Bake

A quick one-pan salmon and asparagus bake that makes weeknight dinners straightforward and satisfying

Ingredients
  

  • 1/2 pound asparagus washed and trimmed
  • 1 pound salmon filet fresh
  • 1 T dijon mustard
  • 2 T white or rose wine
  • few dashes Trader Joes onion salt
  • few dashes garlic powder
  • few turns black pepper
  • 1 T capers
  • 1-2 T parsley chopped
  • 1/2 lemon juiced
  • 2 cups rice (brown or white) cooked (I use frozen)

Instructions
 

  • Place trimmed asparagus and salmon in the bottom of the baking pan
    1 pound salmon filet, 1/2 pound asparagus
  • Combine together in bowl
    1 T dijon mustard, 2 T white or rose wine, few dashes Trader Joes onion salt , few dashes garlic powder, few turns black pepper, 1 T capers, 1-2 T parsley, 1/2 lemon
  • Pour combined ingredients over salmon and asparagus
  • Bake at 400 degrees for 15-20 minutes depending on thickness of salmon and until desired degree of doneness.
  • Serve with rice
    2 cups rice (brown or white)
