A quick one-pan salmon and asparagus bake that makes weeknight dinners straightforward and satisfying
Ingredients
- 1/2 pound asparagus washed and trimmed
- 1 pound salmon filet fresh
- 1 T dijon mustard
- 2 T white or rose wine
- few dashes Trader Joes onion salt
- few dashes garlic powder
- few turns black pepper
- 1 T capers
- 1-2 T parsley chopped
- 1/2 lemon juiced
- 2 cups rice (brown or white) cooked (I use frozen)
Instructions
- Place trimmed asparagus and salmon in the bottom of the baking pan1 pound salmon filet, 1/2 pound asparagus
- Combine together in bowl1 T dijon mustard, 2 T white or rose wine, few dashes Trader Joes onion salt , few dashes garlic powder, few turns black pepper, 1 T capers, 1-2 T parsley, 1/2 lemon
- Pour combined ingredients over salmon and asparagus
- Bake at 400 degrees for 15-20 minutes depending on thickness of salmon and until desired degree of doneness.
- Serve with rice2 cups rice (brown or white)
