A holiday dessert you’ll be sharing with family and friends: this immediately had me thinking about apple pie. I was planning to make one for Thanksgiving, but halfway through I decided I wanted to play around a bit and do something a little different with the crust.

I dug through some old favorite recipes and found a yogurt apricot pie that inspired the idea of using a granola-style crust, along with my all-time favorite apple pie filling. From there, it turned into a fun kitchen experiment. I tweaked the crust, swapped in a few ingredients I love baking with, and leaned into flavors and textures that felt cozy and satisfying.

For the filling, I kept everything classic and comforting, adding a little lemon juice and zest to brighten up the apples. I finished it off with a crumbly oat topping and gave it my own twist by using lemon olive oil, which made the whole house smell incredible while it baked.

The result? A dessert that feels familiar and special at the same time—and one that definitely won’t be making it all the way to Thanksgiving.

REAL Good Apple Pie

Ingredients
  

Granola Crust

  • 1 cup white whole wheat pastry flour
  • 1 cup white flour
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1/2 cup crushed almonds
  • 1/2 cup oats
  • 3-4 T coconut oil melted
  • pinch of salt

Filling

  • 7 cups apples peeled, cored, and thinly sliced
  • 1/2 cup brown sugar packed
  • 1 TB whole wheat pastry flour
  • 1 lemon zested
  • 1 Tablespoon lemon juice
  • 1/2 tsp. cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt

Topping

  • 1/2 cup oats
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup brown sugar packed
  • 1/4 c lemon olive oil
  • 1/8 tsp salt

Instructions
 

  • Preheat the oven to 350 degrees.

Make the crust

  • Mix all ingredients for crust and press into a 9 inch pie crust and cook for 10-12 minutes. Cool.

  • Mix all filling ingredients and place in cooled pie shell.
    7 cups apples, 1/2 cup brown sugar, 1 TB whole wheat pastry flour, 1 lemon, 1 Tablespoon lemon juice, 1/2 tsp. cinnamon, 1/8 teaspoon nutmeg, 1/8 teaspoon salt
  • Mix crumb topping and scatter on top of the apples.
    1/2 cup oats, 1/2 cup whole wheat pastry flour, 1/4 cup brown sugar, 1/4 c lemon olive oil, 1/8 tsp salt
  • Bake for 50 minutes until apples are tender and topping is browned and crispy.
