This months Recipe Redux’s theme is: “The first thing you learned to cook”
Immediately making grape jelly from our grapevine with my mom and “Big Mommy” (my grandma), came to mind. Although I no longer live in that house, nor have a grapevine, somehow making a healthy jam still brings back FRUITFUL memories!!
Mixed Berry Chia Jam
A healthy alternative to sugar laden jams, this jam has a small amount of honey and added crunchy chia seeds to add loads of flavor!
Ingredients
- 1 1/4 cup frozen mixed berries
- 1 tablespoon honey
- zest of one lemon
- 1 teaspoon lemon juice
- 1 tablespoon chia seeds
Instructions
- Place frozen berries, honey, zest and lemon juice in a saucepan and over medium heat. Cook until the berries start to release their liquid and bread down. Mash with a wire masher, and simmer for approximately 8 minutes until it starts to thicken. Add the chia seeds and cook for another minute or two while constantly stirring. Pour into a glass jar and let cool before putting in refrigerator. It will last a few days. Serve on toast, a peanut butter sandwich, or swirl into some greek yogurt!
