Spinach Parsley Spice Yogurt Dip
This months Recipe Redux’s theme is “Get your Fruits and Veggies in Shape” got me thinking. I didn’t want to do the same ole zucchini noodles or mandolin shaved radish or flowers. I had wanted to make a sunflower out of veggies for my future daughter-in-laws bridal shower with healthy dip so this got me thinking. My daughter and I had a blast putting it together and so will you.
Spinach Parsley Spice Yogurt Dip
A delicious dip without the guilt
Ingredients
- 1 1/2 cups packed fresh spinach and parsley
- 3 chopped garlic cloves
- 1 chopped jalapeno chile
- 1 teaspoon cumin
- 1/4 cup water
- 2 1/2 T extra virgin olive oil
- 1 T fresh lemon juice
- 2 1/4 cups plain fat free Greek yogurt
Instructions
- Mix all, chill and serve with veggies or whole wheat pita chips

We did! I initially thought about doing it for my future daughter in laws shower (sunflower theme) but didn’t get to it so when the recipe redux theme came out, I had to try. Can you think of anything else you can make with veggies?
