We have all heard of breakfast for dinner, but how about dinner for breakfast?  This month’s Recipe Redux theme was just that!

I am not a huge breakfast person, usually having a little bite and then something an hour or two later.  So, there are many times when I will have leftovers for breakfast.  I had a whole wheat everything bagel leftover from Sunday’s breakfast, and some grilled chicken with roasted peppers and fresh mozzarella as well as salad from Sunday’s dinner.

This literally took five minutes to whip up and was a delicious, satisfying, and nutritious breakfast.  What are some of your ideas for having dinner for breakfast?

Dinner for Breakfast Bagel

You have heard of breakfast for dinner but what about dinner for Breakfast; ready in minutes this whole wheat bagel, leftover chicken, hummus and salad is nutritious, easy and delicious.

  • 1 whole wheat everything bagel
  • 1 tablespoon hummus
  • 1 grilled chicken cutlet
  • 3 1/4 inch slices roasted pepper
  • 1 1/4 inch slice fresh mozzarella
  • kale salad


  • Slice the ends off of the bagel and toast. Spread with hummus and top with chicken, roasted peppers, mozzarella and kale salad.
